New Braunfel Smokehouse Balls

My darling brother and his wife sent us a big box of sausages from the New Braunfels Smoke House. This was my first use of that wonderful gift. We have very fond memories of the New Braunfels Texas area so this is a commemoration as well.
Ingredients:
1 link smoked cheddar sausage, new braunfels smokehouse
1 egg
1 cup italian bread crumbs
1/4 cup kraft 100% kraft parmesian cheese, grated
Directions:
1. Food process the sausage link so its ground up fine.
2. Mix egg, bread crumbs and cheese in a bowl. Add sausage to the bowl and mix it all together well.
3. Using a big dinner spoon, scoop small amounts of the mixture and roll up small balls.
4. I used this to float in some of my home made Oriental Turkey broth topped off with a bit of fresh parsely. Once you have the soup simmering drop the balls into the broth and let them simmer about 15 mintues. Last 5 minutes or so drop in the parsley.
