Ingredients:
1/4 cup sugar
1 1/4 cups water, divided
1 cup dry white wine
2 tablespoons rice vinegar
1/2 cup fermented black beans
1/3 cup grated ginger
1/3 cup chopped garlic
1/4 cup lite soy sauce
1/3 cup chopped green onion
6 (8-ounce) sea bass fillets

2. Place fillets in a shallow dish or heavy-duty zip-top plastic bag; pour marinade over fillets. Cover or seal, and chill 30 minutes, turning once.
3. Remove fillets from marinade, discarding marinade. Place fillets on a lightly greased rack in a broiler pan.
4. Bake at 450° for 10 to 12 minutes or until fish flakes with a fork.
5. Note: Fermented black beans are also called Chinese black beans and are sold in Asian markets.
