terry's recipe for veggie meatloaf
Ingredients:
1 cup brown rice, cooked
1 cup walnuts, chopped
1 cup mushrooms, chopped
1 cup wheat germ or flax seed
1 cup oats, uncooked
1 onion, chopped
1 green pepper, or red pepper, chopped
1 carrot, grated
2 tablespoons soy sauce
2 tablespoons mustard, stone ground
1 tablespoon peanut butter
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
1/2 cup pasta sauce
Directions:
1. Preheat oven to 350 degrees
2. Add ingredients in order given. (rice should be cooked before measured - one cup cooked brown rice).
3. Mix well
4. Put in loaf pan and cover top of loaf with a small amount of pasta sauce
5. Bake for one hour.
6. Mozarella cheese may be sprinkled on top just before end of baking time.
7. Let sit for 10 minutes before slicing.
