One of the glories os Southern cuisine is the pecan pie. This version is from Providence Baptist Church near Oxford, Nc. Approximately the same recipe was given in their cookbook 12 times.
Ingredients:
1 (9 inch) unbaked pie shells
1/2 cup melted butter
1 cup dark brown sugar
3 eggs, beaten
1 cup light corn syrup (karo)
1 cup chopped pecans
1/4 teaspoon salt
Directions:
1. Into the saucepan holding the melted butter place the sugar and the light syrup. Cook over medium heat stirring constantly until the sugar dissolves. Remove from the heat and let cool a little, then add the beaten eggs slowly with stirring. Stir in the pecans and the salt. Pour the mixture into the unbaked pie crust and bake in a preheated 350 F oven for 50 minutes or so until done.
