Navajo Fry Bread

I use to make this after school for my brothers and myself! If a kid can do it - you can too!
Ingredients:
2 cups sifted flour
2 tsp baking powder
1/2 tsp salt
1 tbs shortening
1 cup water (approx)
cooking oil, for frying
Directions:
1. Sift together flour, baking powder and salt; cut in shortening until mixture resembles course meal. Add enough water to make a soft dough. Knead on lightly floured board until smooth and elastic. Pinch off enough dough to make 1 1/2 balls. Roll or slap back and forth from hand to hand until each ball is a flat 4 circle.
2. Fry in a skillet in 1/4 deep hot oil until lightly brown on both sides, turning once. The bread will puff as it fries. Drain on paper towels. Serve plain, or with jam, or honey or powdered sugar. Better yet - top the bread with refried beans, cheese, lettuce and onions - a Navajo Taco!!
