These are sooooo addictive and delicious. They are a great snack or dessert, very filling, and you don't have to feel guilty eating them :) Depending on how big you roll them, you'll get about 10-14 balls. Cook time is freeze time. Allergic to chocolate? Carob powder works just as great. Can also use almond or cashew butter too, but I love the taste and texture of 365 creamy natural peanut butter.
Ingredients:
1/2 cup cocoa powder
1/2 cup honey
1 cup natural-style peanut butter
Directions:
1. Measure out the cocoa powder into a mixing bowl.
2. Grease your measuring cup with a little oil or cooking spray to measure out 1/2 cup honey, and mix with the cocoa powder with a fork or whisk.
3. Blend until the mixture resembles frosting and there are no loose cocoa particles floating around.
4. Cut in the peanut butter, until the chocolate mix absorbs it.
5. Form balls of the mixture with your hands and place on a plate, and freeze for at least 2 hours prior to eating. Can be eaten cold or frozen.
