When I was young, our minister and his wife moved to Vietnam during the war. When they returned Nancy shared this recipe with my mother. She always called it Nancy's Fried Rice.We made this in an electric skillet but I'm sure it would be fine in a regular skillet.
Ingredients:
1 cup unsalted butter
1 onion, chopped
2 cups rice
1 (8 ounce) can mushrooms, drained
3 (10 3/4 ounce) cans beef consomme
2 (10 3/4 ounce) cans water
1 teaspoon oregano
Directions:
1. Melt butter in the skillet, add onion, rice, mushroom and oregano. Stir well and add consomme and water. Simmer until done about 2 hours.
