Got this from a WW meeting...it is delicious. You wouldn't know that it is diet food if I didn't tell you. My husband thinks this is great and he doesn't usually eat diet food. 5 Healthy units for those of you following the program! Read more !
Ingredients:
12 oz. 95% lean ground beef
1 cup chopped onions
1 (14.5 oz) can of mexican style tomatoes
1 (8oz) can of tomato sauce
1 (4oz) can of diced green chilies
1 tsp chili powder
4 oz. uncooked whole wheat elbow macaroni (i use mini penne)
1 can pinto beans, undrained
1/2 cup water
1/4 cup shredded fat free cheddar cheese (optional)
Directions:
1. Spray a large skillet with cooking spray. Cook ground beef and onion until browned. Stir in tomatoes, tomato sauce, green chilies and chili powder; bring to a boil. Stir in macaroni, beans and water. Reduce heat, cover and simmer until macaroni is tender, about 10 minutes. Spoon into bowls and top with 1 Tbs. cheese.
