Got recipe from my husbands mom. We all love them. You can even add a cup of cranberries and a cup of white chocolate chips. Last night we even made them into bars. So good.
Ingredients:
1/2 cup shortening
1/2 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
2 cups flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups quick oats
2 cups wheat flakes cereal (wheaties)
1 cup flaked coconut
Directions:
1. Preheat oven to 375°.
2. Cream shortening with butter. Gradually add sugars and cream thoroughly.
3. Beat eggs in a small bowl and add to cream sugar mixture.
4. In a small bowl combine flour, baking powder, baking soda and salt. Slowly add to cream sugar mix.
5. Add vanilla, oatmeal, wheaties & coconut and combine well.
6. Drop by teaspoon onto parchment lined cookie sheet.
7. Bake 10-15 minutes.
