My mom made this for us when we were growing up and it is one of my all-time favorite recipes. I usually make it with left-over steak or pork roast, but I recently made it with two raw sirloin steaks thinly sliced and it was amazing! My husband and I can eat one recipe in a sitting, but we have big appetites (I'm still nursing!), so you might want to double the recipe if you have a family of big eaters. All in all, a fast, fancy way to prepare steak or pork roast.
Ingredients:
8 ounces medium-wide noodles
1/4 cup olive oil
1/4 cup butter
2 cups beef or 2 cups pork roast, slivered
1/2 cup parsley, chopped
1 teaspoon dry basil
1/2 teaspoon salt
1/4 teaspoon oregano
1/4 teaspoon pepper
grated parmesan cheese
Directions:
1. Boil water for noodles and cook noodles until al dente.
2. While waiting for the water to boil, combine olive oil and butter in a frying pan over medium heat. Add meat and cook, stirring occasionally, until meat is crisp and browned, about 5 minutes
3. Add parsley, basil, salt, oregano, and pepper. Cook just until parsley begins to turn limp.
4. Drain noodles and place in shallow serving bowl.
5. Spoon sauce over noodles and toss lightly. Sprinkle parmesan cheese on top and serve.
