layered cookie(I say brownie).From Vancouver Island a bay away from Olympics! Nanamio a town (pronounced nuh-NIGH-moe). Sweet pleasure.Base crushed grahams,chocolate coconutnutty, topped with buttery middle layer finished with glossy chocolate.
Ingredients:
2 eggs lightly beaten.
1 1/3 c. melted butter plus
2t unmelted butter.
2/3 c. cocoa
1/2 c. white sugar (raw is ok too)
3 c. graham cracker crumbs
2c. shredded coconut (i toast mine, have done 1/2 toasted 1/2 not diff texture, your call)
1c. finely chopped nuts (type is your call. i use any and all of these,pistacio,pecan,walnut,macadamia,brazil,hazlenut)
1/4 c. whole milk
2t. vanilla
4c. confectioners sugar
8 oz. semi sweet chocolatew chopped (i use chips, no chopping and like milk or white chocolate as well.)
Directions:
1. Heat oven to 350* grease 13X9 inch cake pan.
2. Line with parchment paper extending 1 on each of long ends ,(I spray paper)
3. Whisk eggs,1C of melted butter,cocoa,sugar,in a large bowl; stir in nuts crumbs and coconut.
4. Press into prepared pan.
5. Bake 10 Mins. Cool in pan on rack.
6. Stir together remaining 1/3 melted butter milk and vanilla in a medium bowl.Beat in Confectioners Sugar until smooth.
7. Spead evenly over cooled base.
8. Refrigerate until Firm.About 45 mins.
9. Place Chocolate of your choice in a microwave safe bowl ..with the 2T. unmelted butter..Heat 1 min;Stir..heat 30 sec;Stir until smooth and melted. (I have used a double boiler as well)
10. Spread evenly over filling..Score the surface into serving size pieces.
11. Refrigerate until set..about 1 hour.
12. Use long edges of parchment paper to lift out of pan..Peel paper off any cut into bars..The reccomended yeild is:48 Bars.
