Ingredients:
3 cup(s) whole wheat pastry flour
1 teaspoon(s) salt
1 teaspoon(s) baking soda
1/2 teaspoon(s) baking powder
1 teaspoon(s) cinnamon
1 teaspoon(s) clove
1 teaspoon(s) allspice
3/4 cup(s) wheat germ
3 eggs
1 cup(s) vegetable oil
3/4 cup(s) white sugar
3/4 cup(s) brown sugar
2 teaspoon(s) vanilla
2 cup(s) zucchini grated
Directions:
1. Preheat oven to 325 degrees F (165 degrees C).
2. Grease and flour two 8 x 4 inch pans
3. Sift dry ingredients (flour, salt, baking powder, soda, and spices) together in a medium bowl.
4. Beat eggs, oil, vanilla, and sugar together in a separate, large bowl.
5. Add dry ingredients to wet mixture a little at a time, beating just until combined. Batter will become thick and difficult to work so put some muscle into it.
6. Grate zucchini and fold into mixture until well combined.
7. Pour batter into prepared pans.
8. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. 9. Cool in pan on rack for 10 minutes. Remove bread from pan, and completely cool.
