Nadia's Indian Restaurant Salad

A wonderful salad with both fruits and vegetables! *I am posting this recipe as it was written, but I actually doubled the fruits and veggies, kept the dressing ingredients as listed and found that it was the perfect combination!
Ingredients:
1 large carrot, sliced
1/2 apple, cubed
1/2 pear, cubed
1/2 red bell pepper, diced
1/2 stalk celery, sliced
1/4 english cucumber, cubed
1/4 red onion, sliced
1/4 cup mango, cubed
1/4 cup cantaloupe, cubed
1/4 cup grapes, sliced
1/2 cup sugar
3/4 cup vinegar
1/3 cup salad oil
1 -1 1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Combine oil, vinegar and sugar in a microwavable bowl and heat at 50% power until the sugar has dissolved. Whisk in the salt and pepper.
2. Pour the dressing over the prepared fruit and vegetables. Cover and marinate in refrigerator for at least 4 hours.
3. Mix well just prior to serving. Remove salad with slotted spoon and serve drizzled with marinade.
