This is an excellent Potluck or Party appetizer, works well in a slow cooker to keep warm until served. One nights mistake for mexican lasagna resulted in a Nacho Party meal
Ingredients:
2 pounds ground beef
1 jar (16oz) chunky salsa, any level of heat
2 cans (10 3/4 oz) condensed cheese soup or nacho cheese soup
1 can (10oz) enchilada sauce, any level of heat
2 - 3 cups shredded mexican blend cheese
tortilla chips
****suggested garnishes: jalapenos, olives, onions, etc
Directions:
1. In a large skillet, brown ground beef, until no longer pink. Drain. Return to pan.
2. Add salsa, soup and enchilada sauce to the ground beef. Mix thoroughly. Heat all the way through.
3. Serve hot, top with shredded cheese and any garnishes served with chips.
4. Enjoy.
5. Can go great in a crockpot after browning beef. And cook on low heat for 2 to 4 hours or just kept warm when serving at a potluck
