Need a quick party dish to take to the pot luck you forgot about?? Look no further than this tasty nacho dip! It's a crowd pleaser and easy to make!
Ingredients:
1 box of ready-to-serve black beans
1 box of ready-to-serve kidney beans
1 large jar of salsa -medium spicy
1 large bag of tortilla chips (nacho chips)
1 carrot peeled and chopped into very small pieces
1 bell pepper seeded and cut into small pieces
1/2 onion peeled and chopped
2 cloves of garlic peeled and chopped
1 package (250g) of plain cream cheese
1 package of shredded mozzarella cheese
black pepper
chili powder
little olive oil
**ground beef is optional and olive oil is not required if cooking meat first
Directions:
1. Pre-heat oven to 175*C.
2. Heat olive oil in a large wok or pan on stove.
3. Toss in onions, garlic and carrots - stir.
4. Drain and rinse both packages of beans thoroughly to get rid of excess salt.
5. Add beans and remaining vegetables and cook thoroughly for approximately 10 minutes.
6. Spread whole cream cheese package on the bottom of an oven-safe dish. I prefer the glass long oval shaped ones.
7. Spread bean & vegetable mix evenly on the cream cheese.
8. Spread jar of salsa on top of the beans and vegetables.
9. Sprinkle shredded cheese evenly but generously on top of nacho dip.
10. Bake in oven for 10 minutes, until cheese is melted.
11. Serve with nacho chips.
