N.y.c. Chicken Fried Rice

Ingredients:
1/2 tablespoon extra virgin olive oil (extra virgin olive oil)
1 onion
2 chicken breasts (cubed)
2 tablespoons soy sauce
2 carrots (diced)
1 bell pepper (diced)
2 stalks celery (chopped)
6 cups cooked rice (varies on how much you want)
2 eggs
1/3 cup soy sauce
Directions:
1. Heat oil in a large skillet; add onion, saute until soft, add chicken & 2 table spoons soy sauce & stir fry for 5-6 minutes.
2. Stir carrots, celery & peppers to chicken and soy sauce mixture and stir fry 4-5 minutes then add rice; stir in eggs and 1/3 cup soy cause,
3. Heat and SERVE HOT!
