My Summer Garden Tomato Salad

This salad is about flavor, color and texture. It’s pretty! When done correctly it is a work of art on a plate. It's one of my favorite recipes that orginated in my own kitchen, using fresh tomatoes from my garden. Read more . If you don't have access to homegrown tomatoes, change recipe to use what you have available to you. It's still good! Good dish for taking to a gathering. Serves 6-8 Use My Basic Dressing for Tomato Salad dressing which is on this site. May want to double dressing recipe.
Ingredients:
1/2 lb. red tomato
1/2 lb. red roma tomato
1/2 lb. yellow roma tomato
3/4 lb. yellow tomato (1/2 & 1/2 of lemon boy and golden jubilee)
1/4 lb. large red cherry tomatoes
1/4 lb yellow pear tomatoes
1/2 lb. pink tomato
1 large whole green onion, chopped
1/2 lb. red onion sliced thinly
1/2 - 2/3 cup green bell pepper, diced
12 oz. smoked provolone cheese, small cubes or large shreds
1/4 cup grated parmesan cheese
grated parmesan cheese for garnish
Directions:
1. Cut red and 1/2 of yellow tomatoes into wedges.
2. Cut other half of the yellow tomatoes into chunks, not wedges.
3. Cut romas into 1/2” slices’
4. Cut cherry and pear tomatoes into halves.
5. Cut pink tomato into wedges.
6. Place tomatoes in large mixing bowl but do not stir or toss them.
7. In another large bowl, separate the red onion slices into rings.
8. (Reserve 1/3 of red onion slices for garnish.)
9. Add chopped green onion and diced bell pepper to the 2/3 of red onion.
10. Add Provolone cheese and grated Parmesan and toss.
11. Add to the bowl of tomatoes, pour dressing over the top and lightly toss.
12. Serve on beds of lettuce with wedges of toasted garlic bread.
13. Garnish with Parmesan cheese and remaining red onions.
14. Use what tomatoes are available to you, if you don't have such a wide variety at hand. It's still delicious, just not as showy.
15. Extra fresh basil adds much to the flavor, add fresh basil to taste.
