My Spinach Salad

This is one way to get your kids to eat spinach-yummy yummy!
Ingredients:
2 (6 -8 ounce) bags spinach (washed)
1 red onion, sliced thin
1 (4 ounce) package blue cheese
6 -8 slices bacon (crispy)
1 1/2 cups sugar
1 cup white vinegar
2 eggs, beaten
1 tablespoon dry mustard
Directions:
1. Cook sauce to a rolling boil for 1 minute-then refrigerate.
2. Pour over salad when ready to serve.
