My Shellfish Appetizer

This is a little bit of work, but oh so worth it. I took several recipes and put them together. I make this for special occasions and special guests. And this is definately not on the Jenny Craig diet!
Ingredients:
1/4 cup butter
1/4 cup shallot or green onion, minced
1 pound medium cooked shrimp, peeled, deveined and cut in half lengthwise
8 ounces crabmeat
8 ounces bay scallops, rinsed and patted dry
salt and ground black pepper to taste
3 tablespoons dry white wine, divided
2 tablespoons cornstarch
2 cups heavy cream
1 tablespoon tomato paste
1 tablespoon fresh lemon juice
1/3 cup parmsan cheese, shredded
1/3 cup butter-flavored cracker crumbs
2 tablespoons butter, melted
Directions:
1. In large saucepan, melt 1/4 cup butter.
2. Add shallot or green onion and saute 5 minutes.
3. Stir in shrimp, crab and scallops.
4. Season to taste with salt and pepper.
5. Add 1 tablespoon white wine and cook, stirring, over high heat 1 to 2 minutes.
6. Remove from heat.
7. In bowl, whisk together cornstarch, heavy cream and tomato paste.
8. Add to seafood mixture with remaining 2 tablespoons wine.
9. Return to heat and cook, stirring, 4 to 5 minutes or until thickened.
10. Add lemon juice and adjust seasonings with additional salt and pepper if needed.
11. Spoon into shallow baking dish or 8 individual shell shaped dishes.
12. Combine Parmesan cheese, cracker crumbs and melted butter.
13. Sprinkle over.
14. Place on baking sheet and bake at 400 degrees for 15 minutes or until bubbly and top is lightly browned.
