My Scalloped Potatoes And Pork Pie

This is a unique dinner pie,combining pork chops with creamy scalloped potatoes for a one-pot meal.
Ingredients:
6 lean pork chops
2 tbsp. olive oil
4 medium potatoes
1 1/2-2 cups milk
water to make a broth
salt and freshly ground pepper
1 medium onion/chopped
2 tbls. unsalted butter/cut into pieces
1 ready to use sheet of refrigerated or homemade piecrust
eggwash for over piecrust
Directions:
1. Heat oil in skillet.
2. Brown chops/season.
3. Simmer in water,not much,until chops are done,some broth will remain.
4. Place 1/3 layer of potatoes and onions in a 2 quart cassorole dish.
5. Place 3 chops on the potatoes.
6. Repeat another 1/3 potatoes and onions,and chops.
7. Finish with final 1/3 potatoes and onions on top. and butter cut into pieces
8. Pour over combined broth with pan browned bits from pork frying,and milk,mixed together.
9. season to taste,
10. Cover with pie crust.Make a few slits in crust with fork.
11. Brush with an egg wash of 1 egg mixed with a little water.
12. Bake in oven for 1 hour at 350 degrees.
