My Passover Muffins

OK...all of these recipes are very similar. This one is working for me.
Ingredients:
2 cups water
2 cups matzo meal
1/2 teaspoon salt
1 tablespoon sugar
5 ounces oil
6 eggs
cooking spray
Directions:
1. Preheat oven to 425 degrees.
2. Bring water, oil, salt, and sugar to a boil.
3. Remove from heat and add matzo meal and stir until it forms a ball.
4. Add eggs, one at a time, until each is blended.
5. Divide batter into greased muffin tins.
6. Bake 30-40 minutes until golden brown.
7. Variation: Spoon batter into muffin cups and place 1/2 teaspoon of jam or preserves in center of each muffin. The jam will sink to become filling.
