My favorite recipe for a not-too-clammy clam chowder
Ingredients:
1 cup diced onion
2 cups diced potatoes
1/2 cup butter
1 pint milk
1/2 teaspoon salt
2 tablespoons vinegar
1 cup celery (chopped)
2 (6 ounce) cans clams
1/2 cup flour
1 pint half-and-half
1/2 teaspoon sugar
Directions:
1. Combine cut vegetables in a large stew pot.
2. Drain juice off canned clams and pour juice over veggies.
3. Add enough water to cover vegetables.
4. Simmer over medium heat until tender.
5. Melt Butter in a sauce pan.
6. Add flour and blend until smooth.
7. When vegetables are tender add the flour mixture and all other ingredients to the vegetables.
8. Make sure flour mixture is mixed in well (it acts as a thickening agent).
9. Simmer all ingredients for 30 minutes.
10. Add salt and white pepper to taste.
