My Moms Awesome Cranberry Cake

This is my now-deceased mother's recipe for a luscious, moist, wonderful, tart and sweet, elegant cranberry cake with orange glaze. She made this for every holiday. When cranberries are in season, she'd buy a bunch a freeze them so she could make this anytime she wanted. Read more . I miss her very much, and I really loved this cake, so I thought I'd share it with all of you. Enjoy!
Ingredients:
cake
2 1/2 c. flour
1 c. sugar
1/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. buttermilk
3/4 c. oil
2 eggs
1 c. chopped nuts (optional)
1 c. or more whole cranberries
1 cup raisins (optional)
glaze
1/2 c. sugar
1/2 c. frozen orange juice concentrate (undiluted)
Directions:
1. Mix ingredients from the flour down to the oil together
2. Add BY HAND: (All tossed in some flour to coat so they don't sink to the bottom)
3. 1 C. Chopped Nuts (Optional)
4. 1 C. Or More Whole Cranberries
5. 1 Cup Raisins (Optional)
6. Pour into prepared tube or bundt pan, bake at 350 degrees for 1 hour, or until a toothpick inserted in center comes out clean.
7. Glaze:
8. 1/2 C. Sugar
9. 1/2 C. Frozen Orange Juice Concentrate (Undiluted)
10. Cook on low heat until sugar dissolves, or microwave.
11. Pour over HOT cake. Let cool slightly before removing from pan.
12. Dust with powdered sugar.
