My Grandmother's Apple Muffins

These are totally delicious and moist. I've cut the sugar down from what the recipe originally called for.
Ingredients:
4 apples
1 1/2 cups sugar
2 eggs
1/4 cup vegetable oil
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 cups whole wheat flour
1 cup walnuts
Directions:
1. Preheat oven to 350.
2. Coarsely chop apples.
3. Mix apples and sugar together and let stand for 15 minutes.
4. Lightly beat together eggs, vanilla, and oil.
5. Mix flour, baking soda, salt, and cinnamon together.
6. Stir egg mixture and flour into apples.
7. Add walnuts.
8. Spoon into greased and floured muffin tin or paper cups.
9. Bake 40 minutes.
