A apple cinnamon & pecan filling covered by a crispy crust. This is a farovite of mine that I found in my grandmothers recipe book. When I say recipe book I don't mean a store bought one. This was written in her own hand. I do hope you enjoy as much as I do.
Ingredients:
4 apples (i prefer granny smith)
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 cup pecans, chopped (i like mine coarsely chopped)
2 eggs, well beaten
1 1/2 cups sugar
1 1/2 cups flour
3/4 cup shortening (i prefer the butter flavored type)
3/4 cup butter, softened
Directions:
1. FILLING:.
2. Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)
3. Mix together the sugar and cinnamon then sprinkle over the sliced apples.
4. Next sprinkle on the chopped pecans.
5. BATTER:.
6. Mix together the eggs, 1 1/2 cup sugar, 1 1/2 cup flour, 3/4 cup shortening and the 3/4 cup butter. Batter will be thick.
7. Spread on top of filling.
8. Bake at 300 until crust crisps approximately 45 minutes to 1 hour.
