My Grandmas Bread

This is my Grandma's bread recipe. I grew up next door to her, and she would bake it almost every day. She used milk fresh from our cows and scalded it, and of course made it all by hand. I've changed the recipe so I can use my stand mixer, and also halved it from the orignial because who needs 4 loaves of bread a day! Read more ! It holds up well for a few days, but tastes best fresh from the oven. It also makes a real good French toast. Grandma would make both loaves of bread and buns with the dough.
Ingredients:
2 c. whole milk at 110º f
4 1/2 tsp. yeast
1 egg, beaten
1/8 c. butter, softened
1 tbsp. sugar
1/2 tsp. salt
5-6 c. bread flour
Directions:
1. Place milk in a warmed stand mixer bowl fitted with the dough hook. Add yeast and sugar. Stir and allow to dissolve for 5 minutes.
2. Add butter, egg, salt, and 3 c. flour. Mix on low for 5 minutes.
3. Add 2 more cups flour and raise speed to medium. Mix for 8 more minutes. Add more flour as necessary.
4. When done mixing, turn onto a lightly floured surface a knead just a few times by hand. Place in a greased bowl and cover with a damp towel. Put in a warm dry place and let raise until doubled in size (around an hour).
5. Punch down. With greased hands form into loaves and/or buns. Place in greased loaf pans or on a greased cookie sheet. Cover and let rise for another half-hour. Bake in a preheated 350º F oven for 40-45 minutes for loaves and 30-35 minutes for buns. Turn out onto cooling racks and top with butter.
