My Favorite Matzoh Brei

I love a thin matzoh brei that is fried in larger pieces instead of the watery fried mess that you find in restaurants. Here's my recipe for you. What you'll end up with is a crispy-fried meal fit for a King! Read more ! You can serve it with a jelly or jam of your choice or add a bit of butter with a sprinkling of salt to top it off.
Ingredients:
4 large eggs
4 sheets of matzoh (i use plain, unsalted israeli matzoh)
2 tb regular butter
2 tb half and half or whipping cream
optional
1 tb regular butter (save for topping)
jelly or jam
Directions:
1. Break the matzoh into three inch pieces.
2. Whip the eggs and cream together well for a minute.
3. Add the matzoh pieces and stir well to coat with the egg mixture.
4. In a large frying pan (10-12 inch pan), melt the 2 TB of butter over a medium flame.
5. Add the matzoh all at one time and spread out over the melted butter in the pan.
6. Cook for five minutes until the bottom of the matzoh is golden brown. Using a spatula, flip the entire mass over.
7. Cook for five more minutes until the bottom is golden brown and crispy.
8. Slide this on to a plate and place the 1 TB of butter on the top, spreading it as it melts over the matzoh.
9. Cut in half (enough for 2!) and serve.
