I threw this together years ago after a night out. It was soooo good . I thought maybe it was because of the drinks and the hour so had to make it again. It was soooo good.
Ingredients:
2 large potatoes, diced
1 med onion, diced
leftover meat, beef or pork roast, steaks, chops etc, chopped
4-6 eggs
garlic pepper
grated cheese, what ever kind you have in the fridge in whatever amount you like
optional: peppers-hot or sweet, left over veggies, mushrooms, olives, herbs or what ever strikes your fancy.
Directions:
1. Fry potatoes and onions in oil or butter till done to your liking. I cook mine till they are brown and crispy. Add meat and any optional ingredients and fry till heated. Add eggs, stir. Cook till done. Sprinkle with garlic pepper and cheese. Serve with whatever condiments you like. My husband likes ketchup and I prefer Emeril’s green sauce or salsa and sour cream. My daughters want it without meat, maybe with some tofu. Add toast and hot chocolate and you have the perfect comfort meal.
