One of my favorite salads with the ripe red tomatoes from the garden! You can use any variety of tomato, and you can make enough for 1 or 20! For me, the riper and juicier the tomatoes the better!
Ingredients:
2 medium / large ripe heirloom tomatoes
fresh mozzarella pearls
sea salt
fresh ground black pepper, or white pepper
fresh basil
balsamic vinaigrette (i used ken's light)
Directions:
1. Cut tomatoes into bite size chunks and place in salad bowl or serving bowl
2. Add mozzarella pearls in the ratio that you want to tomatoes. I used half a pkg.
3. Add fresh basil, again, the amount is to your liking. Some like more, we like less. And we like the leaves torn. You can chop them or leave them whole
4. Mix together and sprinkle with salt and pepper
5. Drizzle balsamic vinaigrette over all and stir. The vinaigrette mixes with the juice of the ripe tomatoes for a lovely dressing.
6. Serve and enjoy.
7. ***I have served this in a champagne flute using ripe cherry tomatoes when we had guests for dinner and it was a big hit!**** You can also slice your tomatoes and use sliced fresh mozzarella.
