My Mother-in-law Debbie makes this for me every year for my birthday. It is my favorite cake that she makes, and of course, I love anything strawberry. To me this cake tastes better the more it sits, and is perfect with a glass of cold milk. Even though I'm not a boxed cake mix fan, there's always an exception, and this cake in my book is one of them.
Ingredients:
1 (18 ounce) box white cake mix
1 (3 ounce) box strawberry jell-o gelatin dessert
3/4 cup corn oil
3/4 cup frozen thawed out strawberry (reserve 1/4 cup juice for the icing)
4 eggs
1 (1 lb) box powdered sugar
1/2 cup softened margarine
1/4 cup strawberry juice
Directions:
1. Mix cake mix and dry jello together by hand.
2. Add eggs and mix well.
3. Pour into three 9 inch cake pans that have been buttered and floured.
4. Bake at 325 degrees for 30 minutes or until done.
5. Let cake sit for at least 10 minutes before removing from pans and allow to cool completely before frosting.
6. For the icing, mix all ingredients together, and frost onto cooled cake.
