My Big Fat Greek Pizza

Ok . . .ok! Corny name but it fits! This pizza is loaded with toppings so it’s definitely a fat mouthful! It’s got tons of great ingredients and a wonderful mix of flavors in it. Give it a try and tell me if you agree! Read more !
Ingredients:
1 large boboli pizza crust (or you make one if you feel adventurous!)
pizza sauce
1 28oz can of diced tomatoes
1 small can of tomato paste
3 tablespoons of olive oil
1 small diced vidalia onion
1 teaspoon of crushed hot peppers
1 cup of chopped tri-color peppers ( frozen is fine)
2 teaspoons of balsamic vinegar
2 teaspoons dried oregano
2 heaping tablespoons of minced garlic
pizza toppings
1 small eggplant sliced thin
1 small vidalia onion sliced thin
2 roma tomatoes sliced thin
4oz mozzarella cheese shredded
small container of feta cheese crumbled
1 cup small spinach leaves
1 pound of loukanika or hot italian sausage
small can of sliced black olives
Directions:
1. Preheat oven for 400 degrees
2. Grease a cookie sheet with non-stick cooking spray.
3. Arrange sliced eggplant, sliced onions and sliced tomatoes on cookie sheet and season with salt and pepper.
4. Place in oven for 15 minutes to roast these veggies and dry tem out a little.
5. Remove and place veggies on a separate plate.
6. In a large skillet, brown the Loukanika as links or the italian sausage crumble up. Set aside when done.
7. **** MAKING THE SAUCE ****
8. In a large skillet heat 3 tablespoons of olive oil and add garlic, peppers and diced onions.
9. Saute for several minutes until they start to get tender.
10. Add 28oz can of diced tomatoes, basalmic vinegar, oregano and crushed hot peppers and bring to a steady simmer. Continue to stir so non of it burns.
11. Add tomato paste and continue to simmer for about 20 minutes to let flavors get stronger and and the sauce to thicken. Then remove from heat and let cool down.
12. **** ASSEMBLE PIZZA ****
13. Place pizza crust on cookie sheet.
14. Spead a good coat of sauce on Boboli pizza crust. You will have lots left over but save it for another recipe ( or just eat it by the spoon full! Its so good! )
15. Coat the sauce with a healthy layer of mozzarella cheese.
16. Arrange roasted eggplant and roma tomatoes on pizza.
17. Place roasted onion rings on pizza.
18. Scatter spinach leaves on pizza.
19. Spread sliced Loukanika or crumble italian sausage on pizza.
20. Top with crumbled feta and sliced olives.
21. Top with a thin layer of more mozzarella cheese.
22. Place pizza on cookie sheet in the oven and let cook for 15 – 20 minutes.
23. Remove and let cool for a few minutes. Slice into 8 pieces and serve.
