Vegan, but delicious! This is more than a snack, this is a full meal in a glass. It is an ORIGINAL RECIPE I created because I wanted more protein for the calories and it had to be Vegetarian. I am sharing it because I am thankful for all the wonderful recipes others have made available to me. Because of dietary special needs I use the program MasterCook 9 to calculate the nutritional value of my recipes. Calculating ALL ingredients as listed, this recipe yields 445 calories; 9g fat, 21g protein, 78g carbohydrate, 7g dietary fiber, 0g cholesterol and 200mg sodium.
Ingredients:
2 tablespoons soy protein powder (i use better-than-milk soy powder, light)
1 cup orange juice
1/2 cup firm tofu (i use nori-nu tofu, firm)
1 medium banana, frozen
3 tablespoons oat flour
2 (1 g) packets stevia plus (i use sweet leaf, it adds fiber!)
Directions:
1. Combine soy milk powder, orange juice and tofu in a blender. Cut the banana into slices. Add banana, oat flour and sweetener to ingredients in the blender. Blend until smooth.
