Here in Missouri you have to have potato salad when your BBQing or frying some catfish. You can serve this warm or cold. You could even double the batch.
Ingredients:
3 -4 large potatoes, boiled, peeled and diced
2 eggs, boiled and diced
1/2 cup mayonnaise
2 tablespoons mustard
2 tablespoons pickle relish
1/4 teaspoon onion powder
1 pinch salt and pepper
Directions:
1. Combine all ingredients and mix well.
2. Serve warm or refrigerate for 1 hour and serve cold.
