Mustard-basil Vinaigrette

This is another recipe from my catering days. It is a favorite of mine.
Ingredients:
1/3 cup sweet-hot mustard
2 egg yolks
1 tbsp. fresh lemon juice, strained
1 tbsp. garlic puree
2 tbsp. mayonnaise
3 1/2 oz. apple cider vinegar
1 1/2 tsp. dried herbs de provence
1 1/2 tsp. parsley, finely minced
3 oz. red wine vinegar
1/4 tsp. salt, or to taste
1/4 tsp. fresh ground white pepper, or to taste
Directions:
1. In a blender or food processor, combine mustard, egg yolks, lemon juice, garlic, mayonnaise, vinegars, herbs and parsley; process briefly.
2. With machine running, add oil in a thin but steady stream; process until thickened.
3. Use as a dressing for a green salad or a dip for vegetables.
