Mushrooms on Toast

This recipe was given as a easy comfort food. I had actually never tasted this before; but I do love mushrooms, so I thought I'd try it. And am I glad I did! This has to be one of the best new dishes I've tried in awhile. Whether for lunch or snack, if you like mushrooms, you'll love this dish!
Ingredients:
1 tablespoon extra virgin olive oil
2 shallots, finely diced
1 garlic clove, finely chopped
6 ounces button mushrooms
1/4 cup white wine
1 sprig thyme, plus more (to garnish)
2 thick slices whole wheat or 2 country bread
butter
salt and pepper
Directions:
1. Gently cook the shallots in the olive oil 2 minutes; add the garlic and cook a minute more.
2. Add the mushrooms and toss them to coat. Add the wine, thyme and salt and cook until mushrooms are cooked through.
3. Toast the bread on both sides; spread with butter. Season the mushrooms with pepper and more salt if needed. Pile them on the toast thickly. Top with fresh thyme if using.
4. NOTE: You can add a spoonful of mascarpone cheese to the toast with the butter if you're feeling indulgent.
