Mushrooms And Vermouth Soup

My Mom makes this one for me and this is one soup bowl that will be licked clean! The Vermouth is key. Also use fresh mushrooms.
Ingredients:
2 pounds of fresh mushrooms, chopped
6—8 tablespoons of unsalted butter
3 cups of white onion, finely chopped
1 tablespoon sugar
1/4 cup flour
4 (10 oz.) cans of chicken broth
2 cups martini rossi vermouth
Directions:
1. In a large crock pot, melt butter on low heat
2. Sauté the onions until soft
3. Add the sugar
4. Add only 2/3 of the chopped mushrooms
5. Add flour, chicken broth and vermouth
6. Simmer for approximately 2 hours
7. Add remaining mushrooms upon serving
8. Serve with fresh buns for dipping
