Mushroom Stuffing Casserole |

My college roomy always had a way with casserole dishes. This borders on being a stuffing dish. It's delicious as a side. Love it! Ingredients:
1 lb raw mushrooms |
2 tbsp butter |
1/2 chopped onion |
1/2 cup chopped celery |
1/2 cup chopped green peppers |
salt and pepper to taste |
1/4 cup mayo |
8 pieces of bread butter then remove crusts and cube |
2 eggs |
1/2 cup milk |
1 can cream of mushroom soup |
1/2 cup parmesan cheese |
Directions:
1. Saute the mushrooms in the butter Remove. 2. Saute (add more butter if necessary) the onions, celery and peppers and remove. To these add the salt, pepper and mayo. 3. Grease 2 qt. casserole, then layer 1/2 or the bread, 1/2 onion mixture, 1/2 of the mushrooms. 4. Repeat in the same order. 5. Pour over the top, 2 eggs beaten with the milk. 6. Cover and refrigerate overnite. 7. Spread the top with the soup and sprinkle with the cheese. 8. Bake at 325 degrees for 45 minutes. |
