Mushroom Stuffed Beef

Ingredients:
1 cup dried mushroom
1 cup sliced mushrooms
1 onion, chopped
1/2 red bell pepper, chopped
2 garlic cloves, minced
1/2 cup seasoned dry bread crumb
1/2 cup minced parsley
1 teaspoon dried thyme
1 1/2 lbs london broil beef
1 tablespoon vegetable oil
1/4 cup dry red wine
Directions:
1. Preheat oven to 325.
2. In a medium bowl, combine the dried (reconstituted) and fresh mushrooms, onions, pepper, garlic, bread crumbs, parsley and thyme.
3. Cut the beef in half, to make it have of the thickness spread it open like a book.
4. spread the beef mixture evenly on beef.
5. Starting from the short end roll up like a jelly roll and tie with kitchen string.
6. In a nonstick pan heat the oil and cook the roll until brown.
7. transfer to a baking dish, add the wine and place in the oven.
8. Bake covered at 325 until cooked through about 1 hour.
