Mushroom Stroganoff

Have you ever wanted the taste of stroganoff but not the expense? Serve this recipe over any grilled or pan fried steak and enjoy. It also makes a great dish served over noodles or white rice.
Ingredients:
2 tbl. butter
2 large shallots, diced
1 pound sliced mushrooms (use any kind you have)
1/2 pint sour cream
1/2 cup dry red wine (merlot is great, but use what you have)
1 tbl. soy sauce
3 tsp. sweet paprika
1/4 tsp. fresh grated nutmeg
salt
pepper
fresh chopped parsley for garnish
Directions:
1. Melt butter in a skillet and add the shallots, saute over low heat until soft but not colored.
2. Turn up the heat and add the sliced mushrooms, toss with the shallots and cook, covered, for 5 minutes or until mushrooms give up their juices.
3. Stir in the wine, soy sauce, paprika and nutmeg.
4. Simmer uncovered until liquid is reduced by half (about 5 minutes).
5. Remove from heat and stir in the sour cream.
6. Serve over your steak or noodles, or whatever, even toast points, garnished with parsley.
