Mushroom Spinach Feta and 1 Yolk Omlet

Healthy and tasty omlet
Ingredients:
3 egg whites
1 egg yolk
2 white button mushrooms, chopped
1/4 cups spinach
1 tsp feta cheese
1 tsp extra virgin olive oil
Directions:
1. Heat oil in skillet over medium heat
2. Toss in chopped mushrooms.
3. When mushrooms are half done, add spinach.
4. Stir together and when mushrooms and spinach are done, remove from skillet and set aside.
5. Beat 3 whites and 1 yolk. Add tablespoon of water to egg mixture if preferred.
6. Heat non-stick skillet over medium heat.
7. Add eggs to skillet and allow to harden.
8. Add mushroom and spinach mixture to middle of slightly hardened egg and add cheese.
9. Fold over and serve.
