Cooked Veggie Medley - Portabella mushrooms, fresh spinach, and eggplant
Ingredients:
12 oz onions
5 oz celery
7 oz mushrooms, portabella
5 oz eggplant
12 oz organic baby spinach
1 tbsp olive oil
3 tsp garlic
14.5 oz organic tomatoes
6 oz tomato sauce
Directions:
1. Dice all veggies. Saute onions, garlic and celery in oil. Add mushrooms and eggplant. Add tomatoes and sauce. Finally add fresh spinach and let it wilt down. Serve hot.
