MUSHROOM SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bateman Estate in Quitman, Texas in 1987.
Ingredients:
1 large head green lettuce
1 large cucumber
1/2 pound fresh green beans
1/2 pound fresh mushrooms
1/4 cup french dressing
Directions:
1. Rinse lettuce then break into large pieces.
2. Peel and slice cucumber into 1/4 slices.
3. Rinse green beans then cut into 1” pieces.
4. Place lettuce, cucumber and beans in plastic bag then store in refrigerator overnight to crisp.
5. Trim mushrooms stems to 1/4 of cap then cut into thin slices.
6. Just before serving carefully pat lettuce, cucumber and beans then drain on towel.
7. Place in wooden bowl then cover with dressing.
8. Toss to lightly coat all ingredients with dressing then top with mushrooms.
