italian style risotto
Ingredients:
6 cups chicken broth
3 tablespoons olive oil
1 pound portabello mushroom, thinly sliced
1 pound white mushrooms, thinly sliced
1 onion
1 1/2 cups rice
1 tsp rice
4 tablespoons butter
1/3 cup grated parmesan cheese
Directions:
1. In pot, use butter to brown onion. Pour in short grain rice and broth and cook according to rice directions.
2. In pan use some butter to cook mushrooms.
3. When rice is done add in mushrooms, any extra butter, salt and parmesan cheese
