Mushroom No Crust Quiche

Easy, tasty, savory, zesty quiche. Enjoy
Ingredients:
1/2 pound fresh mushrooms sliced
1 bunch green onions chopped
3 tablespoons butter
3 eggs
1/2 cup plus 1 tablespoon all purpose baking mix
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon nutmeg
1-1/2 cups milk
1-1/2 cups pepper jack cheese shredded
Directions:
1. Heat oven to 350 then butter a 9 cake pan and set aside.
2. In skillet sauté mushrooms and onions in butter.
3. Beat eggs then add baking mix to eggs and mix until smooth.
4. Add salt, pepper and nutmeg to egg mixture and blend for 1 minute.
5. Slowly add milk to egg mixture and mix thoroughly.
6. Layer bottom of buttered cake pan with half of the mushrooms and onions.
7. Add cheese then top with remaining mushrooms and onions and pour egg mixture over top.
8. Bake for 55 minutes.
