Mushroom Canapes

Another dish my-mother-in-law taught me and we use quite a bit. Filling can be prepared hours ahead,and stored in refrigerator.
Ingredients:
1/4c butter
2 tbs fine chopped onion
1/2lb mushrooms,fine chopped
2tbs flour
1tbs salt
2tbs cream
2tbs sherry
30 2 circles of bread,toasted on 1 side
1/2c grated parmesan cheese
5 slices lean bacon,cut into 30 squares
Directions:
1. Saute onion and mushrooms in butter 5 mins. Add flour and salt and blend. Add cream and cook,stirring constantly for 5 mins. Stir in sherry.
2. Spread on untoasted side of bread. Sprinkle with cheese and top with a square of bacon. Broil till bubbly and bacon is crisp. Serve immediately.
