Mushroom-Barley Soup

Super yummy and one of those dishes that makes you melt!
Ingredients:
1/2 cup uncooked barley
6 1/2 cups water
2 tablespoons butter
1 medium onion, chopped
2 garlic cloves, minced
1 lb mushroom
1 teaspoon salt
4 tablespoons soy sauce
4 tablespoons red wine
ground pepper
Directions:
1. place barley and 1 1/2 cup water in a pan- bring to a boil and let simmer for 20 minute.
2. meanwhile, get a pan, melt the butter, add the onions and sautee for 5 minute.
3. add garlic, mushrooms and salt.
4. cover and cook, stirring occasionally until everything is tender, about 10-15 minute.
5. stir in wine and soy sauce.
6. add the sauteed things to the barley along with the 5 cups water.
7. add generous amounts of black pepper, to taste and simmer for another 20 minute.
8. Serve and enjoy!
