Mushroom And Potato Chowder

A hearty comfort food chowder . All you need to add is a good loaf of bread.
Ingredients:
1/2 cup onion -- chopped
1/4 cup butter or margarine
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
3 cups water
1 pound mushrooms -- sliced
1 cup celery -- sliced
1 cup potatoes -- diced, peeled
1/2 cup carrots -- chopped
1 cup light cream
1/4 cup parmesan cheese -- grated
Directions:
1. In a large kettle, saute onion in butter until tender.
2. Add flour, salt and pepper; stir to make a smooth paste.
3. Gradually add water, stirring constantly.
4. Bring to a boil; cook and stir for 1 minute.
5. Add the mushrooms, celery, potatoes and carrots,
6. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender.
7. Add cream and parmesan cheese; heat through
