Mushroom and Pepper Frittata

This is a quick, low-fat meal tha works for breakfast, lunch, or a light dinner.
Ingredients:
1 green bell pepper, chopped
8 green onions, chopped
1/2 lb mushroom, chopped
1/4 cup chicken stock
1 teaspoon thyme
3 whole eggs
2 egg whites
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
Directions:
1. Bring broth and 1/2 tsp of the thyme to a boil; add vegetables and simmer until liquid evaporates.
2. Beat the eggs with the remaining thyme, the salt, and the pepper.
3. Melt butter in a pie pan and add eggs and vegetables.
4. Broil for 5 minutes; top should be brown.
