Mushroom and Herb Sauce for Pasta

A simple vegetarian sauce ideal served with pasta.
Ingredients:
1 tablespoon olive oil
9 ounces mushrooms, chopped
3 garlic cloves, chopped
2 tablespoons parsley, chopped
fresh ground black pepper
2 teaspoons all-purpose flour
5 tablespoons water
parmesan cheese, grated
Directions:
1. Heat the olive oil in a small saucpan, add the mushrooms and fry gently for about 5 minutes or until softened.
2. Add the garlic and the parsley, season with pepper and leave to cook for a few minutes in their own juices.
3. Gradually add the flour, stirring constantly, then enough water to make a thick, creamy sauce.
4. Served with grated parmesan if you wish.
