Ingredients:
1 1/2 cup(s) abita amber beer
3/4 cup(s) worchestershire sauce
1 tablespoon(s) shallot finely chopped
1/2 tablespoon(s) garlic finely chopped
1/2 cup(s) heavy cream
1 1/4 tablespoon(s) cracked black pepper
1 tablespoon(s) lemon juice
1 tablespoon(s) rosemary chopped
2 pound(s) unsalted butter cubed
1/4 teaspoon(s) fish sauce
32 whole(s) shrimp, 10/15 count shelled, deveined, grilled
1 tablespoon(s) creole seasoning
Directions:
1. Every 8 shrimp is served with 4 ounces of the sauce over cheddar grits.
2. Place beer, Worcestershire and shallot in a pot and reduce until almost all liquid is evaporated. Add cream and reduce until thickened. Lower heat to low and start whisking in butter. When all butter is incorporated, remove from heat. Whisk in remaining ingredients.
